I once cooked a pork roast dinner in a hotel room's spartan kitchen, & the whole meal was amazing. Just so good!
OMG, I've never been able to duplicate it no matter how I've tried.

You can try cooking them the same way you do steaks that you want well done. Cook them through slowly in a sous vide cooker or a low oven until the internal temp is where you want it, then a quick sear on a very hot pan to crisp them up.
