Thought I would post my favorite of my mother's soup recipes. They are simple and taste great.

Homemade Chicken Noodle Soup

1 chicken cut up and skinned

1 medium onion chopped

4 or 5 stalks of celery chopped

4 or 5 sliced carrots

1 large can of chicken broth

water to finish covering the chicken

salt and pepper to taste

your choice of width of noodles---we like medium for this soup.

This can be put into a crock pot and cooked all day. Or, as my mother made it--- put in a dutch oven and bring to a boil. Set heat on low and allow to cook several hours until chicken falls from bones. Either way you choose to cook it, leave time to remove the chicken from the pot and allow to cool enough to remove the meat from the bones. Then return chicken to pot.

In separate pot, cook noodle as directed. You may have to place noodle in each bowl and cover with soup to serve, because sometimes there isn't enough room to put the noodles into the soup mixture. After the first serving, the noodles usually fit.

BEEF NOODLE SOUP

1 or 2 lbs of browned stew meat (depends on how much meat you want in your soup)

a couple of beef shanks (if you can find them--but any bone the butcher has will do)

1 large can of tomato juice

1 large can of beef broth

4 or 5 stalks of celery, chopped

4 or 5 carrots, chopped

2 or 3 bay leaves

1 med to large onion, chopped

1 bag of noodles--we like wide noodles for this soup

Can be cooked in crock pot, but it can go on the stove in a dutch oven. If cooked on stove, bring to boil, then cut heat to low and cook for two hours. If the broth boils down, add water.

Noodles can be added to the soup after they are cooked separately, as directed in large pan.

My family loves both of these soups. My son is 36 and has said for most of his life that his favorite meal is the chicken noodle soup. It warms my heart when I make these soups as it always takes me back to my mother's kitchen. I hope you enjoy them.
