Homemade Avacado Salad Dressing

Does anyone have a good recipe?  I've been trying to make my own with fresh avacados, rice vinegar, olive oil, a bit of sour cream, pepper, and some garlic and paprika.

 

I am so tired of all the salt and calories in bottled dressing.

 

I just would love to read some of your avacado dressing ideas.

@Frosted Cake

  1. 1/2 avocado, pit removed
  2. 2 tbsp olive oil
  3. 1 tbsp lime juice
  4. 1 clove garlic, minced
  5. 1 tsp fresh cilantro, chopped
  6. 1 tbsp water
  7. Pinch of salt
Directions
  1. To make the dressing, blend the ingredients with an immersion blender or in a regular blender and process until smooth. Add more water if necessary to reach desired consistency, and taste for seasoning.

I will try that.  I don't have any cilantro, but will try the lime juice.  Sounds good!

@Frosted Cake,  I think you are on the right track, there. I use plain Greek yogurt instead of sour cream. I think cilantro would also be good.

Thanks Debcakes for that great idea about the yogurt.  I always forget to substitute sour cream for yogurt.

@mousiegirl .... This recipe sounds fantastic!

I'll be making it within the week. I've been making my own dressings for a while and getting so burnt out on lemon and vinegar based dressings. Thanks for sharing!
