I got a terrible craving for Rice A Roni for some reason this past week. I havn't eaten it since I was a child but I know it is full of sodium and MSG, etc which I will eat if I have to when that is my only choice if I'm out but when I make my own food I try to keep away from prepackaged things. I found this recipe for do it yourself Rice A Roni and I made some changes and it is delicious! It t...

What I did was, I made it into a one pot meal by sauteeing an onion in 1Tbl of my home made garlic oil. Then I added two carrots which I grated and 1 pound of lean ground beef. I cooked till the beef was done. I added salt and pepper and some of my penzey's spices to give it some flavor (smoked paprika, shallot pepper, the forward blend...whatever seasonings you like). I removed this from the pan and I sauteed the rice and crushed vermicelli in one more Tbl garlic oil and i added a bit more of the spices I like. When the vermicelli was browned I added reduced sodium chicken broth and an entire head of brocolli which I had chopped up well. Cooked with the lid on till almost done, added the beef back to the dish and let it go for a little longer till everything was blended nicely. Here is the basic recipe. It was delicious and easy and made a big panful. You could easily make up your own packets of dry mix of it for convenience! I did not use the bouillion cubes, I added reduced sodium broth from the can but you could use whatever you are comfortable with. This is a keeper for me! Lots of room for improvising too! Enjoy!
