I generally cook it before freezing.   I often buy in bulk and mash it and freeze after roasting..   Saves a lot of time.

Here is what I do I peel a head or two of Garlic rmove skins and put in chopper and when it is finely chopped I will put in a ziploc baggie and freeze for later uses. I also roast garlic or cook it in oil on stovetop until tender mash and freeze in a baggie as well. I just love my Garlic...Woman Happy
