Going to try frying flounder for dinner this evening. I hope all I need is breadcrumbs or panko because that's all I have. I do have flour and eggs if it has to be coated first. And I have vegetable oil for frying. So....do I need to coat with egg and flour and can vegetable oil be used for frying? Anyone use either just panko or basic breadcrumbs for coating and it still tasted good? Thanks everyone. I should of thought this out better.

I do it the way my Mom always did it and it's a family favorite for sure
-equal parts flour, panko, and seasoned breadcrumbs...mixed together
beaten eggs in separate bowl
first place flounder in breadcrumb mixture then eggs then breadcrumb mixture again
fry in veg oil on med heat till golden
place on paper towels to absorb any oil
serve with tartar sauce or cocktail sauce
delish

@ScrapHappy I use cod when I fry fish, so cannot guarantee your flounder which I believe is also a mild fish, but am not sure how delicate it is.

Finely crumbled potatoe chips make a delicious topping for sautéed flounder. Gives it a nice crunch without all the oil.

ever tried crunchy baked? i rub the filets with mayo, then coat in a crumb/panko mixture. bake in oven. turn once. not as greasy, none of the pushing the fish around the pan. its yummy.

I eat a lot of mild white fish and since I can not tolerate greasy food - I often just bake with a coating of mayo spread on top of the fish - add garlic - parsley - whatever and/or pan fry the fish on med heat without any breading.
Breading can soak up and hold a lot of oil.
