Heart Smart Chicken

4 medium chicken breast halves...boneless, skinless

1/8 teaspoon cinnamon...ground

1/8 teaspoon cloves...ground

2 tablespoon canola oil

1 teaspoon garlic...minced

3/4 cup yellow onion...diced

1 cup orange juice (fresh)

1/4 cup almonds, slivered

1/4 cup raisins

2 medium oranges...sliced

Sprinkle chicken with cinnamon and cloves.
Heat oil in large skillet. Place chicken in oil and brown until golden. Flip chicken.
Mix together garlic, onion, orange juice, and 1 cup of water. Pour over chicken. Cover and cook at a low simmer for 35 minutes. Stir occasionally.
Heat oven to 350 degrees. Spread out almonds on a baking sheet. Cook for 5-10 minutes. Remove from oven. Add almonds, raisins, and sliced oranges to chicken. Cover and cook for 5 minutes.


~~At the end you can thicken the sauce with a bit of corn starch.~~ I also like this with rice.
