Adding this recipe to my 'make this next' list. TY @ECBG
Today I am making from scratch Chicken Parmesan with spaghetti - big batch so we can have extras for leftovers. The sides are garlic bread and salad.
When we make pasta sauce, we make big batch and freeze in quart sized bags for easy weekday meals

I just finished making this. The flavor is fine, but from the photo, I had expected more of a glaze, or at least a thicker sauce. Is there something I can do to get more of a glaze? I was thinking about adding more brown sugar and letting it cook for awhile without the cover on. TIA

@Chi-town girl Great! Please let me know if you like it. Also, I got some very nice (safe to microwave) containers on amazon that are wonderful if you're interested.

Have you tried this? It looks very good. Is there a sauce with it to serve it with rice?
I agree with the poster that suggested adding some pineapple chunks
I wonder about some chopped nuts on top or a sprinkling of coconut ( not the sweet one)

@doxie1 No, Sweetie. I haven't tried it. Having taught Foods and Adv Foods my entire career, (You know design is my pet though), I'd love to make it and agree about adding the pineapple since the pineapple juice is in there, it's a given.
DH won't eat anything that is sweet on meat, unless it's grilled. Go figure. I love Sweet and Sour chicken and pork, have to get it when we're out.

I made this last week in a dutch oven on the stove, browned the chicken first with a little seasoning and soy, then added the pineaple juice from a can of Dole tidbits, was 1 c. exactly, and the brown sugar and soy and covered it and simmered for maybe an hour or more.
I added the pineapple bits for the last half hour, and before serving some water and cornstarch and soy to thicken and make a glaze. Served it over rice and it was meltingly tender and delicious. We ate it all.....hubby loved it.
The sauce was too thin without the bit of cornstarch: 1 or 2 T in 1/2 c. water, dash soy for color and flavor and stir in gradually until the right consistency.
I think some sweet green or red peppers towards the end would be great and some fresh grape tomatoes just heated through in the sauce before serving. More color and nutrition!

@ECBG , I made this today. Threw in some pineapple chunks, green peppers and onions at the end. I then put it in a pan on the stovetop and added some red pepper flakes for a little spice. I thickened up the sauce with a little cornstarch and cold water. Thanks for sharing. Will serve over rice and will have some pork egg rolls to go with it. 😋
