@Twoaces Duck needs dry heat - like the oven.  It was years ago and no Google to consult - either the cooking time or the temperature got away from us and ended up with shoe leather duck and (OMG) the grease!

I only roasted one and never again.  I put it on a rack and by the time it was done. That pan had 3" of grease in it.  Had this gamey taste.  Never again!

pierce the skin, salt and pepper is good. I put onion chunks in the cavity.

 

It will splatter so I roast in a covered pan on a rack.  Put water or broth in bottom of pan. Near the end of cooking time take of the lid, turn up the oven to brown.

Also, cranberry sauce melted down would be wonderful with it.  I'd do some scalloped potatoes or stuffing and some fresh green beans.

I have cooked lots of ducks wild and domestic.  I would never put one in a pressure cooker.  I would roast it in a roasting pan.  

 

Lots of instructions on the internet.  Find one flavored like you like.  But I think it will just get tough and soggy in a pressure cooker.

You mean stuff it w/ celery, apple or orange?

BTW, the duck was delicious .. just w/ salt and pepper.

I can imagine how good it would be stuffed with onions and little potatoes.

Mmmm .. Yum!  That sounds good.

The duck was sooo good with just salt and pepper.

Next time I'll stuff it.

Haha!  I saw the recipe with the "oranges", but I'd already started cooking.

So many variations!

I don't like chicken, so these suggestions are great!
