This is more like a dessert that I would like to serve.  Light and not heavy.

  • @Calibeach .  I make this a couple of times during the year when I am getting together with the girls.  We all love it. My daughter is bringing desserts.  But maybe I will make for Christmas and bring to my daughters house.  Ladies, gents, make this.  You will not be sorry.  The fruit we like the best are  strawberries and bananas.   I slice bananas right before serving so they don't turn brown.

@AuntG .  Do we have the same family??? LOL.  My daughter is baking and bringing Brownies.  She is also going to bring an Apple Pie.  I today am baking Russian Tea Cakes.

I will freeze until Thursday morning and put in more powdered sugar after they are defrosted..  However, we all love a good Brownie.  LOL.

@walker .  Even though I gave suggestion already, I also want to tell all of you that I have also done a Chocolate Cream Pie for the holidays.  Everybody always goes for a piece of tbat.  Do easy recipe. 

 

Graham Cracker crust (store bought)

Cook and serve chocolate pudding.   (Use Whole Milk ONLY)

Make the pudding and pour into pie crust.   

On each slice when serving, add reddi whip

do you use a mini cupcake tin?  i don't think the wafer would fill the bottom of full size

but recipe indicates that'swhat you use.

@tessam .....  I use regular muffin/cupcake tins and a regular size vanilla wafer in each. It used to work fine.  But, I am concerned now, since companies have decreased size of products, IF that will fit or be too small.  I have had this recipe for several years. Maybe that is why many online recipes today call for a graham cracker type crust.  There are recipes online also for mini-cheesecakes using the mini-muffin tins.   I guess I need to try my own recipe again. 😁

@Fribwl - it's an easy recipe and not costly. It can all be prepared a day in advance including chopping/prepping the fruit dippers that I stack in the refrigerator using the medium sized LocknLock containers. Plus other dippers like small cookies and pretzels.

super easy and delish!

 

2 Ingredient Lime Bars

 

Equipment needed:

9 x 13 baking dish
 

Ingredients:

  • 16 ounce angel food cake mix
  • 21 ounces key lime pie filling
  • Powdered sugar optional; for dusting

nstructions:

  • Preheat the oven to 350℉ (176℃) and spray a 9×13-inch baking dish with non-stick cooking spray.
  • In a large bowl mix together the key lime pie filling and angel food cake mix using a spoon or spatula. Mix gently until just combined.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Place the baking dish in the oven on the center rack. Bake for 20-25 minutes or until the top starts to brown. Check for doneness by interesting a toothpick into the center, it should come out clean.
  • Remove the pie bars from the oven and place on a cooling rack. Allow the pie bars to cool completely, about 1 hour.
  • Slice the pie bars into squares and dust with powdered sugar. Serve and enjoy!

Will shop today for the TWO ingredients. This definitely can't be any easier to make or satisfy my taste for something sweet!!! I'll probably pick up an extra cake mix-- I already have some lemon curd to change the flavor when making this at a future time.

Just thought of something. I have a brownie pan (has the sectional insert that looks like those old metal ice cube trays). I may try baking the batter in the browmie pan and have convienently portioned, brownie-sized lime or lemon curd bars. I also use this pan to bake up a small batch of cornbread.
