The thread regarding Appetizers here made me think about desserts as well. So often after a big meal, no one is ready for dessert or they want something small. This is a go-to for me .... easy and good for Christmas...recipe has been around for years.
Petite Cheesecakes
2 (8oz) pkgs. cream cheese, softened
3/4 cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla
24 Nabisco vanilla wafers (not mini-wafers)
24 cupcake liners
1 can cherry pie filling*
Green food coloring, optional*...holiday
Beat together cream cheese, sugar, eggs, lemon juice and vanilla*. Place cupcake liners in regular size muffin tins. Put one vanilla wafer in bottom (right side up). Pour cream cheese mixture in each about 2/3 full. Bake at 350 for 20-25 minutes ....check at 20 minutes...might be done if middle cracks a bit and some golden on edges. Let cool for 30 minutes and refrigerate until serving. Add topping after they are cool.
*** At holiday time, I add a little green food coloring to cream cheese mixture. After baking I decorate with cherry pie filling. Other times during year, I use different toppings...blueberry, cherry, etc. I add miniature flags for Memorial Day and July 4th.

Love looking at delectable desserts, but my family would be happy with brownies topped with red and green sprinkles!
I will make two kinds of cookies, and have ordered homemade treats from a neighbor (candy assortment and a chocolate peppermint cheesecake).

@AuntG great idea about the brownies. I'm trying to resist because I don't want to gain any weight. It's very tempting around holidays but then clothes start getting too tight.

My SIL makes a scrumptious homemade version of Junior's Red Velvet Cheesecake cake. It is made in a springform pan using red velvet cake layers with a cream cheese filling in between. I've watched her make one and it is somewhat labor-intensive.
