This is one of my old favs - I am making it tonight. I like to serve it over fresh cooked spinach instead of rice.

6 green onions
1/4 cup hoisin sauce
1 T soy sauce
1 T dry sherry
1 T minced fresh ginger
1 t minced garlic
1 T peanut oil
1-1/2 pounds med shrimp, cleaned
1/4 t salt

Cut green onions into 1 inch pieces

Mix together hoisin, soy sauce and sherry and set aside.

Heat wok until almost smoking. Add oil. Add ginger, garlic and salt. Stir fry for 20 seconds. Add shrimp and stir fry 2-3 minutes until done. Add scallions for 30 seconds and then add sauce mixture and stir for about a minute.

Easy and fast. Enjoy!
