I am always posting not so healthy recipes so when I found this one I thought I would post it. I made it by the recipe the first time but truly missed the mayo so I put a small amount of low fat Hellman's in it. I'm listing the proportions in the recipe but when I made it I used one of those individual cans of tuna. I used about a Tb. of green onions, 1 stalk of celery with the leaves, I didn't have any parsley. I have no idea what piri piri (I guess it's a pepper of some kind) is but I had crushed red pepper flakes & I just put a sprinkle in to give it a little kick. I had some left over white cannelinni beans in the fridge so I put about 1/4 c. in. For the dressing I already had fresh lemon juice in the fridge so I used about 2 tsp. or so with the olive oil & maybe 1 Tb. low fat mayo. It was really delicious - I didn't even put it on bread. I don't like a lot of heat but I really enjoyed the crushed red pepper flakes in it. There was just enough in there to feel just a little kick! I hope you guys like it.

HEALTHY TUNA SALAD

6 3/4 oz. tuna

3 green onions, minced

3 celery stalks, minced

1/4 c. minced Italian parsley

1/4 small lemon, juiced

1 tsp. piri piri or other crushed red pepper

1 Tb. olive oil

kosher salt, to taste

14 oz. white beans, rinsed with water & drained

Drain the tuna. Place in a mixing bowl with the onion, celery & white beans. Gently stir. Squeeze the lemon over the mixture, stir. Add the piri piri, parsley & olive oil. Gently stir. Season to taste with the salt & serve. It doesn't say how many people it serves but the individual can made a nice size serving for me.

I always have Goya Small white beans but never thought to add them to tuna! I won't miss the mayo cuz I love LOVE lemon! It will do it for me! I like the tuna in the pouch. Nice and meaty! Can you describe fish as meaty? LOL

I also need a "touch" of mayo in tuna salad. A variation I make sometimes includes green onion, celery, sliced Kalamata olives, splash of red wine vinegar. a bit of mayo.

I'll bet this is good! Tuna & white beans go well together.

Along the same vein as tuna/beans - years ago when I was vegetarian, I used to make 'mock' tuna salad, using garbanzo beans, or sometimes navy beans instead of tuna.

These days, if I'm trying to be good, I'll use plain yogurt & a bit of Dijon instead of mayo. It's surprisingly good, & tastes lighter.

I like to add chopped apple in tuna or chicken salad and celery if I have both on hand. If not, one or the other.

You're welcome. I never would have thought of adding the beans either. I probably could get along with the mayo but at least I'm using less & I always use low fat. The second time I made it I kind of made a lemon aioli & just left the olive oil out. I think I may try it again without the mayo & maybe add some cut up cherry tomatoes which would also add some "juice". I added some of the celery leaves too to give it some texture. I was just so surprised at how much I liked it & it was very filling which is good for me. In fact, I had kind of a big lunch today so I may make this for dinner. I hope you enjoy it & yes I think you can describe fish as meaty!

Thx, I am going to make this but omit the beans & add low fat mayo. I am not a big tuna eater, but enjoy it every so often.
