I know most of us don't even have our tomatoes planted yet this year, but here's a great way to clean up the green tomatoes left on the vine in the fall.

1 c oil
3 eggs, Beaten
2 c sugar
2 tsp. vanilla
2 c green tomatoes, ground
3 c flour
1 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1/4 tsp. cloves
2-1/2 tsp. cinnamon
1/4 tsp. nutmeg
nuts (optional)
raisins (optional)

Stir together oil, eggs, sugar, vanilla and tomatoes. Sift together flour, soda, salt, cloves, baking powder, cinnamon, and nutmeg. (2-1/2 tsp. Pumpkin Pie spice can be used in place of cloves, cinnamon, and nutmeg). Add the dry ingredients, then pour batter into two well oiled loaf pans. Bake at 325 for 1 hour.

For Variation: reduce tomatoes to 1-1/2 c and add 1/2 c grated apple OR 1/2 c crushed pineapple.
