I make my own dressings and can be creative with what I use. The ingredient that makes the difference for me is Fish Sauce. I wouldn't make dressing without it.

The use of the specialty oils and vinegars mentioned is something I'd like to try.

I love Yasou Greek Dressing. It’s my favorite. It’s just like the one my local Greek pizza place uses. They also have a variety with feta.

All the store bought dressings I have seen have some type of additives. They are not 100 extra virgin olive oil so you loose the benefits.

My grandparents only used 100% extra virgin first cold press olive oil from

Greece, salt, pepper, dried oregano and cider vinegar.  They both lived to be 100. They made salad at every dinner.

@KLm ---yes to the fish sauce--DD and I use that like..... wash- your- sister sauce--worchestershire sauce---Woman Very Happy--heard that on youtube and really giggled at that --. but it is something just adds that missing taste to things.

Lot of definitions of what this type of dressing is, so lean in a direction you like.

But they all rely on a really good vinegar.  I have a specialty store I can go to and they let you taste too.  It does make a difference.  They stuff at the grocery is not good.

It takes no time to make your own and you will be well rewarded.

@Still Raining I also go to a specialty store that mostly sells olive oil & vinegar.  You can taste all the different flavors that they have and they store them in large barrels.

When that store first opened many years ago I didn't think it would last but it did and I am so greatful!  The oils & vinegar are expensive but so worth it!

My kids tell me I am going to go broke with the vinegar and coffee I buy.  Oh and the olive oil too!

Once you have tasty vinegar you can never go back.

I saw this recipe on Facebook but haven't tried it yet.  They have black pepper listed twice; probably a typo.

@Imaoldhippie  Glad you like it.  It is the only vinaigrette-type dressing I keep on hand.
