Just had this for dinner tonight. I got this recipe from my SIL, which she believes originated from Eating Well magazine.

Ingredients

2 cups uncooked penne pasta

½ cup butter

1 large chopped onion

¼ cup flour

1 can reduced sodium chicken broth

1 cup crumbled feta cheese or shredded Havarti cheese

3 cups chopped rotisserie chicken

1 can chopped artichoke hearts

½ cup chopped sun dried tomatoes

½ cup sliced kalamata olives

2 T chopped fresh parsley

Directions

Cook & drain pasta. Melt butter in a 3 qt. saucepan, add onion and cook 3 or 4 minutes. Stir in flour and cook an additional minute. Add chicken broth and bring to a boil, stirring occasionally. Remove from heat and stir in cheese. Add cooked pasta, chicken, artichoke hearts, tomatoes, olives & parsley. Pour into a baking dish and bake for 30 minutes at 350 degrees.
