Grain-Free Crusty Rolls
(recipe source: Against All Grain)

I feel like most of us are always trying to eat healthy or at least make some healthy choices. I totally love a hamburger like the next person but instead of that pesky bun I usually end up using lettuce leafs as the 'bun'. 80% of the time, I'm omitting grains, carbs and/or sugars. HOWEVER... sometimes you just want bread and when I do, these are my 'go-to' buns. They are perfect for hamburgers or sandwiches. These are best fresh out of the oven or toasted the next day.


1-3/4 cups almond flour
1 tablespoon coconut flour
1/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup unsalted butter, softened (or coconut oil)
2 eggs, separated
1/2 teaspoon honey
1 teaspoon virgin olive oil + 1/2 teaspoon coarse salt

Preheat oven to 350 degrees.

Combine the dry ingredients in a large bowl. Add the wet ingredients (butter, egg yolks, honey) and mix until just combined. Beat the egg whites in a separate bowl until soft peaks form. Fold the egg whites into the dough, then divide into four balls.

Place the dough balls onto a cookie sheet lined with parchment paper, then use the palm of your hand to lightly flatten the balls. Brush with olive oil, then sprinkle with course salt. Bake at 350 degrees for 15 minutes.

I'm out of both almond meal & coconut flour right now but I'll be getting both soon. I'll let you know how they turn out for me.

I'm like you - usually eating burgers on lettuce leaves or just on the plate.

I know, I too need to stock up on some essentials. I love the lettuce 'buns' but every now and then I crave a more 'life like' one..lol

Hi, Lola!

It is nice of you to post this recipe. I have a new cookbook I have enjoyed, and I have been using almond flour and coconut flour. It is called Satisfying Eats (grain free, sugar free). There is a recipe for sandwich buns, but it has 1 1/2 cups almond flour, some coconut flour and 5-6 eggs! (Other ingredients too, of course). I think the recipe you posted sounds good.

I have made scones from this cookbook, with almond flour and coconut flour, and they were good.

I have been back to absolutely no grains this week. I was getting a little lazy about avoiding grains.

Thank you, LoLa, for this recipe! I found out late last fall that I have antigens to gluten and soy, so must now eat gluten-free. I must admit to fudging on occasion, but must be as true to my new food plan as possible. Can't wait to try this recipe!

Hi oceantown! You're quite welcome. That new cookbook sounds wonderful. I hope that you find many treasured recipes in your new gem. I'd love the scone recipe, if you wouldn't mind sharing. It sounds like it would be delicious. I don't know about you, but I just feel less tired when I'm avoiding grains.
