Re: Graham cracker pecan chews

Sounds sooooo good!!! I am going to make some too!!

The only place I buy Pecans or any nuts for that matter is Costco. They are so reasonably priced. I just use what I want, seal the rest in a zip lock bag and they keep for a very long time. Just make sure they are sealed properly, you don't want them to dry out.

I can't wait. I am going to make mine with butter also. I don't think it would hurt and I love butter. {#emotions_dlg.biggrin}

Re: Graham cracker pecan chews

I am making this recipe today and I want to say thanks to the OP for posting. I picked up a couple of bags of pecans at Wal-Mart: they were $6.48 for a 10 oz bag- not cheap, but I have seen more expensive in years past. My big score, however was Brazil nuts: they were $4.68 per a 10 oz bag- unheard of!!! I am making this recipe with pecans, but I am also going to try the Brazil nuts-decadent!!! Poodlepet

Re: Graham cracker pecan chews

I'm going to make these, sounds delish!! I do make something very similar with saltines & almonds. That recipe does use butter. Now I'm wondering if I can change it to Parkay also.

Thanks for posting!

Re: Graham cracker pecan chews

Libby, could you please post that recipe? I made it years ago for a gathering and people swooned. I lost the recipe, but I do remember a major faux pas: I thought if it was that wonderful and decadent with saltines, how much richer and wonderful would it be with Ritz crackers..it was an absolute failure. Saltines are the way to go,and I would so appreciate the recipe. Thanks, Poodlepet

Re: Graham cracker pecan chews

Hi Poodlepet, here is the recipe:

Almond Crunch Crackers:

1 stick butter

1/2 c sugar

1/2 c sliced almonds-[you can go a little heavier if you like]

saltine crackers....club crackers works well also!

Spray cookie sheet with pam.[ I don't, I line it with non-stick foil]

lay crackers on sheet, single layer. [A 10 x 15 jelly roll pan size]

Melt butter and sugar, bring to a rolling boil. Pour over the crackers and spread with back of spoon to coat cracker well.

Sprinkle with the almonds. Bake at 350 for 7-9 min. I lift up the whole foil of crackers, right off the sheet to cool, then take them off the foil.

If you think the crackers don't look browned enough ,bake for 10 min. That is what the recipe called for, but I thought they looked to dark. Just use your own judgement. I peek at them around 7 min. then keep going till they look how I want them.

Kibby, THAT IS THE RECIPE-EUREKA!!! If there are any toffee lovers out there, you have to make this- and if you really want to " go for the gold" be sure to sprinkle with your choice of chocolate chips.... Thanks, Poodlepet

i have made these often and they are always a hit.....so easy yet so delicious. you can add any type of nut ( i use pecans or walnuts usually and chop them). you can also really go crazy and add toffee chips! these are especially good if you like a sweet/salty flavor. have never tried them with club crackers, but that sounds like a good idea!
