doglover, I have made the Eclair Cake and it is so easy and soooo good! The best part is you make it the day before serving, so it's one less thing to do when company comes.

I have never made it will pre-made frosting, which does not really appeal to me. I also make it with real whipped cream.

For those of you who would rather make your own chocolate topping, it is very easy to do on the stove top.

The topping ingredients:

1/3 c. unsweetened cocoa powder
1 c. sugar
1/4 c. milk
1 stick (1/2 c.) butter (or margarine)
1 tsp. vanilla

Bring cocoa, milk, and sugar to a full rolling boil; boil about 1 minute, stirring very frequently. Remove from heat and cool one minute. Add butter and vanilla; stir until butter is melted. Pour over top layer of graham crackers and refrigerate overnight.

No-Bake Chocolate Eclair Dessert, best if made a day ahead of serving

thank you, will certainly be making this topping next time I make this cake, picture makes me hungry for it now.

You know that limited-edition Pumpkin instant pudding is out right now? It's in the grocery stores. Would work with graham crackers as a sort of pumpkin pie pudding.

The original version of this recipe goes back 50 years or more ... my mother used to make it ... but it was much more simple ... just layers of graham crackers and your favorite pudding .. nothing else ... not even powdered sugar ...

I have made it over the years for my own children ... and now my grandchildren ...

It has been spruced up over the years, and all of the recipes are great ... but sometimes I like to bring back memories and just whip up the original version ...

I don't know if I'm making it, because I don't make desserts just for me--but if I'm going over to visit friends, I'd make it. I'd use Vanilla frosting, but I'm actually not a fan of canned frosting, so perhaps I'd make a cream cheese frosting of my own.

You know, this could be a replacement for pumpkin pie for big parties.

I too love pumpkin everything--it seems to be the flavor of the year; the grocery store had an end cap display of everything Pumpkin from cans of pumpkin to cakes, snacky cakes, pudding and who knows what else.
