Found this among my "must try" list of recipes. They look really good to serve with turkey, chicken or ham. The coconut milk mixture reduces as the potatoes cook...do not drain the potatoes.

Gingered Sweet Potatoes

2 1/2 lb. sweet potatoes, peeled and diced into 2" cubes

1 can (14.5 oz) coconut milk

1 c. water

1/4 c. brown sugar

4 T. unsalted butter, melted

1/4 c. chopped cilantro or parsley

3 T. ginger, minced or grated

1 T. jalapeno, seeded and diced (optional)

1 T. lime juice

1 t. kosher salt (less for table salt)

Cook sweet potatoes in coconut milk, water and brown sugar for 15-20 minutes, until tender.

Do not drain. Mash by hand(leaving a chunky texture), in the pan, then stir in butter.

Blend cilantro/parsley, ginger, jalapeno and lime juice in a food processor until minced.

Stir cilantro mixture and salt into potatoes.

Makes 5-6 cups
