My grandparents were from Germany and we ate it often. There weren't many ingredients. Red potatoes, oil, vinegar, salt, pepper and a hard boiled egg sliced on top. My grandmother always served it room temperature. Sorry I couldn't get more specific. I don't know that my grandmother measured anything. My sister doesn't when she makes it.

My sisters potato salad(the best) but is probably also the most fattening and bad for you. It is always the first bowl emptied though and one of the most requested recipe.
Cut up and cook 5 lbs. of little red potatoes.
Cool and add 1/2 cup diced scallions and some fresh parsley.
Cook 1 lb cut up bacon till crisp and save ALL the grease.
Mix 3 Tbsp of flour, 1/2 teas salt, 1 cup of sugar and 1 egg.
Stir in 1 1/2 cups of milk, 1/2 cup rice vinegar and cook over medium heat always stirring till thickened.
Take off heat = Add 1 Tbsp of butter and let it Cool.
Whisk in 16 oz. of Miracle Whip. (has to be Miracle Whip she said).
Add the crumbled bacon and ALL the grease.
Pour over potatoes, scallions and fresh parsley.
Hot German Potato Salad Recipe forrestwolf
Ingredients
9 medium potatoes
1 1/2 lb. smoked sausage or fully cooked bratwurst links
6 bacon strips
3/4 cup chopped onion
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon celery seed
1/8 teaspoon pepper
1/4 cup sugar
1-1/3 cups water
2/3 cup seasoned rice vinegar
Directions
In a saucepan, cook potatoes in boiling salted water until tender.
Meanwhile, cut sausage into 1/2-in. slices; sauté in a skillet until browned. Drain and place in a large bowl. Drain potatoes; peel and cut into 3/4-in. cubes. Add sausage; keep warm.
Cook bacon until crisp; crumble and set aside. Drain all but 3 tablespoons of drippings; sauté onion in drippings until tender. Stir in the flour, salt, celery seed and pepper; blend well. Add sugar, water and vinegar; bring to a boil. Boil for 2 minutes.
Pour over potato mixture and stir gently to coat. Sprinkle with bacon. Serve warm.

Yes it isn't the best for you but it isn't something you make all the time either but is a treat and is very good, excellent in fact.

doglover3 - your sister's potato salad sounds seriously good and I agree: eating it once or twice a year won't kill anyone.
My mom wasn't the greatest cook, but she made a killer German potato salad, with no measurements, of course. Even watching her, my sister & I can't duplicate it.

I made German Potato Salad for a family dinner shortly after I married. I could not get over using all the bacon grease, but that's what the recipe called for and I followed it exactly. I had never eaten this kind of potato salad before, so it wasn't to my taste, but my father-in-law absolutely loved it. My mother-in-law tasted it and declared it "terrible", and insisted I had obviously misread the directions and done something wrong. She had the exact same cookbook I had, so I showed her the recipe, and she still held true to the fact I had done something wrong. Several weeks later my father-in-law told me that my mother-in-law had tried the recipe, and the potato salad had turned out exactly the same as mine! That was one of the closest moments I ever had with my father-in-law.
