Garlicky Mushroom Linguine

8 ounces linguine

6 Tablespoons butter

½ cup chopped onions

5 garlic cloves, minced

16 ounces button mushrooms, thickly sliced

1/3 cup white wine

½ teaspoon salt

1/4 teaspoon pepper

½ teaspoon basil

2 Tablespoons parsley

6 Tablespoons heavy cream

Cook pasta in boiling, salted water, according to directions, drain and keep hot.

While pasta is cooking, in a large skillet, melt butter, add onion, garlic and mushrooms, saute over medium-high heat for about 5 minutes. Add wine, salt, pepper and basil to the skillet. Cover, and simmer gently for 8 to 10 minutes, stirring occasionally.

Uncover. Add parsley and heavy cream. Simmer gently until liquid thickens and reduces a bit. Toss the hot cooked pasta with the mushroom sauce. Serve with garlic bread and a green vegetable or side salad.

My notes: Cook pasta 1 minute less than box directions say. Drain, then add to the sauce and finish the pasta there. I find it easy to remove from the heat, cover and let sit for a minute or two. Wine: Chardonnay works very well.

Strive for respect instead of attention. It lasts longer.
