Garlic Mushroom Quinoa
(recipe source: D*mn Delicious)
This is such a great side dish for fall. It's delicious and easy. It really goes well with anything.
1 cup quinoa
1 tablespoon olive oil
1 pound cremini mushrooms, thinly sliced
5 cloves garlic, minced
1/2 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
2 tablespoons grated Parmesan
1 tablespoon finely chopped fresh parsley
In a large saucepan of 2 cups water, cook quinoa according to package instructions; set aside. Heat olive oil in a large skillet over medium high heat. Add mushrooms, garlic and thyme, and cook, stirring occasionally, until tender, about 3-4 minutes; season with salt and pepper, to taste. Stir in quinoa until well combined. Serve immediately, garnished with parsley and Parmesan.

Plain quinoa will not fly with my family...I like it....not them! But if I jazz it up....they love it!
I recently tried a Mexican Quinoa recipe and it was a BIG hit! I know this will be too!

Hi Respect Life! This one is a goodie! I know how you feel because my family won't it the plain quinoa either. The garlic and Parmesan really give this a risotto feel. I hope that you enjoy it!
Hi Millie! Sometimes I wish ingredients would magically appear in my pantry. It would definitely make my life easier. I hope if you try this, you'll like it.
