My mom made goulash all the time when I was a kid--elbow macaroni, hamburger, some sort of red sauce and probably, whatever leftovers there were in the refer--I loved it !! Don't remember any cheese in it tho. I made a version of it myself when my kids were young--only added kidney beans in with the mix--don't think I used many leftovers in it---never had leftovers much but....I did add cheddar cheese to it. Was just a dump casserole too, so no set recipe.

Oldie but Goodie recipes....I second @Knit-Chick ...thanks for reminder of good-old fashioned Goulash @Luvsmyfam.  I always seem to have a pound of ground beef and think...what haven't I fixed in awhile...BINGO...GOULASH!  Most recipes seem similar.  My mother also added a can of cream-style corn.....a friend of mine used both cream of tomato and cream of mushroom soups....all included green pepper and either cheese or bread crumbs on top.

 

Love the memories and reminders of the old recipes...this and the fruit salad thread also....ants on a log...takes me back to my kids preschool days.

I had goulash as a child that my mother made with the stew meat, tomato, sour cream over noodles.  I could never find a recipe.  If one of you ladies who make it that way could post a recipe I would really appreciate it!  Thank you.

I've also made it with soup.  I use a can of tomato  and a can of vegetable.   Such an easy go to meal.

@FLtricia I make this recipe in my crockpot from an old issue of Cook's Country magazine:

 

4 lb beef chuck roast, cut into large chunks

12-oz jar roasted red peppers, rinsed

1/3 cup paprika

2 tbsp tomato paste

1 tbsp white vinegar

2 tbsp vegetable oil

6 cups (4 lbs) chopped onions

4 carrots, peeled and cut into 1" chunks

3 tbsp flour

1 bay leaf

5 tbsp water

1/2 cup sour cream

 

Pat beef dry and season with 1 tsp salt.  Place in crockpot.

 

Puree peppers, paprika, tomato paste, and vinegar in food processor until smooth.

 

Cook onions, carrots, and 1 tsp salt in oil in big covered pot until softened.  Stir in flour, bay leaf, and pureed pepper mixture until it begins to turn brown.  Stir in water and scrape up browned bits.  Stir into crockpot to coat beef.  Cover and cook on high until meat is tender, 6-7 hours.

 

At end of cooking time let settle for 5 minutes.  Skim fat from surface and throw away bay leaf. 

Stir sour cream and 1/2 cup hot cooking liquid in bowl, then stir into crockpot.

 

Serve over cooked egg noodles.

My Mom made your recipe, but called it "American Chop Suey".

 

My goulash consists of a cubed chuck roast, red bell pepper, onions, carrots, lots of paprika, tomato paste, and sour cream served over cooked eggs noodles.


@deepwaterdotter    I never knew this dish had a name until a friend who is from New England gave me her recipe and she called it American chop suey. I read that  in other parts of the country it is called John Marzetti and American Goulash.  Cal it anything but I love this dish. When I am stumped for what to make for dinner I often turn to this. I like to use a can of tomato soup in mine.

I always use 2 lbs. ground beef, 2 cups water and 

worchestershire sauce a couple of splashes.

I buy a 29- ounce V-8 juice instead of tomato sauce, use about half save rest for later. I use petite diced tomatoes. garlic powder, diced onion, green bell pepper diced Salt & pepper to taste. cook on low for about 20-25 min. then add dry elbow macaroni stir turn off heat cover & let it sit 30 min. * Use the spices you like*
