These are very good. Just don't overcook!

12 large sea scallops, about 1 pound
2 T butter, softened
1-1/2 T finely chopped fresh ginger
1-1/2 T finely chopped green onion (white and light green parts only)
1 T peanut oil

Dry the scallops by laying them out on a paper towel.

Mix together butter, ginger and green onion well in a small bowl and set aside.

Heat a nonstick skillet over high heat with 1/2 T oil. Add half of the scallops and sear until nicely browned, about 2 minutes. Turn them and sear the second side, about two minutes. Add half of the ginger/butter mixture to skillet and make sure the scallops get well coated. Remove to serving dish - drizzle with any remaining pan butter. Wipe out skillet and repeat with the other half of the scallops.
