GINGER COOKIES WITH BROWN SUGAR ICING

I pulled this recipe out of the newspaper many years ago.  It is always a hit.  I thought I had posted it before but could not find it. 

 

2 cups sugar
1 cup butter-flavored Crisco
1/2 cup butter
2 eggs, lightly beaten
1/2 cup light molasses
4 cups flour
2 t baking soda
2 t cinnamon
1 t ground cloves
2 t ginger
1/2 t nutmeg
1/2 t salt

ICING
4-1/2 t butter
9 T whipping cream (1/2 cup + 1 T)
1-1/2 t vanilla
3/4 cup + 2 T brown sugar
3 cups powdered sugar

 

Pre heat oven 350 F.

 

Cream sugar, Crisco and butter.  Add eggs and molasses and mix.

 

Sift together dry ingredients and stir into butter mixture.  Make dough into small balls.  Place on parchment covered cookie sheet 2 inches apart.  Flatten the balls. Bake for 10-12 minutes.

 

ICING
Combine all icing ingredients except powdered sugar and bring to a boil stirring.  Boil 2 minutes.  Cool and add powdered sugar. Spread on cookies.  

 

The cookies spread so make sure there is space between them.

I love spiced cookies - even better with frosting!  Thanks for posting. I will definitely give them a try.
