There's no right or wrong way to make salsa, some take all these ingredients and pulse in a food processor and drain off some of the liquid to make a "dry" type salsa, I opt to hand chop everything fine, I do not like the texture of the food processor although it's really a fast way to make salsa. I don't mind the "drips" to a salsa either and due to the salt it becomes more liquid the next day.
6 medium to large tomatoes finely chopped, disgard any large amounts of seeds that is normally in the cavities of the some variety of tomatoes.
2 Tablespoons lime juice
1/4 cup red onion finely chopped
1/4 cup white onion finely chopped
(if you only have a white use all white or if you only have a red, use all red) I do not advise a sweet onion though.
1 jalepeno finely chopped remove all seeds if you don't want "hot" add some seeds depending on the heat you want
2 cloves of garlic finely chopped
3 Tablespoons of Cilantro finely chopped
1/2 can (4 oz) tomato sauce (buy brand name, genenric makes the salsa taste "funny"
1-1/2 teaspoons kosher salt
3/4 teaspoon sugar
Mix thoroughly and refrigerate for the flavors to blend. My mom always used the food processor and "chopped" but I didn't care for the pulverized product.
Making salsa is like making a good tomato sauce, some like it with sugar and some do not, experiment and have fun.
I even make this with cherry tomatoes since that's what I am picking now so I chop them into 6 pcs. Takes time but oh the end product is so good.
ALTERNATIVE
Don't want to go through all this work and just want to chop tomatoes and add a mix, best mix I found is from Concord Farms, it's usually on it's own stand in the Produce section. They have mild and hot, now mild is too mild for me and hot is way too hot for me so I mix them, perfect.
So your ingredients are chopped tomatoes, chopped onion and a mix. Pretty easy.
I had a jar of Penzey's Pico Mix, I don't care for theirs, it has some weird taste to it and makes it unpleasant to me.
Mrs Wagers has salsa mix too, I don't care for her's either, it doesn't make the tomatoes "shine" and doesn't taste fresh, but again that's my taste.

Mateo's is my favorite. I swear I can eat half a Costco-sized jar with a big bag of tortilla chips.

Seems like the big thing is to put salsa on virtually everything. I've seen TV ads this week with McDonald's offering it with all their breakfasts including pancakes and biscuit combos. Yuck!

Salsa topping on any kind of omelet, frittata or even scrambled eggs is the best.

Need to get some onions...as I only have sweet.

Dang---fresh salsa sounds amazing--am going to a nearby farm for stuff to make pesto and I will be picking up ingredients for salsa too!!! ![]()

Actually, the correct name for fresh salsa is pico de gallo.
Pico de gallo, also called salsa fresca and salsa cruda, is a type of salsa commonly used in Mexican cuisine. It is traditionally made from chopped tomato, onion, and serrano peppers, with salt, lime juice, and cilantro. Pico de gallo can be used in much the same way as other Mexican liquid salsas
