Fresh Fruit Crumble (Crumble frozen for future use)

With fruit-a-plenty, it's time to CRUMBLE!

 

This months' issue of Good Housekeeping has a great "Fresh Fruit Crumble" recipe using cumble that has been pre-made and frozen for use when you need it.

 

Fresh Fruit Crumble

Keep a bag of this goes-with-everything crumb topping in your freezer and sprinkle it on whatever fruit is in season, chopped and tossed with a little sugar: plums, peaches, nectarines, berries, apples or pears. Bake at 375 for 45 minutes or until fruit is soft and bubbly. Serve with a scoop of vanilla ice cream or whipped cream.

 

Crumb Topping

 

In mixer, mix 2 cups all purpose flour, 1 cup old-fashioned oats, 1 cup packed brown sugar, 1 tsp finely grated lemon peel, ¾ tsp apple pie spice* and ½ tsp salt until combined. Add 10 Tbs of butter, cut up. Beat until coarse crumbs form. With fingers, squeeze to form large chunks.** Transfer to re-sealable plastic bag. Freeze for up to 2 months.

 

Place slightly sweetened and chopped/sliced fruit in a baking dish.  Cover with crumb topping.  Bake at 375 for 45 minutes on middle rack in oven or until fruit is bubbly.  Place remaining crumble back into freezer for future use.

 

*In place of apple spice, use mostly cinnamon with a bit of nutmeg and a small pinch of clove.

**When covering fruit with crumble, be sure to break up large chunks a bit.

Hi rosehill,

 

Not quite.  We're moving on the 27th.  This purchase took so long as the former owner had to turn the property over to the bank, which was HUD & FHA - extremely compicated.  Many hurdles.  So...we're almost there.  Thanks for asking!  Now I get to use my new LG stove (piggy back ovens).  Woo Hoo!
