Fresh Cranberries Recipes?

Hey all~ someone had given me a bag of fresh cranberries in with some other produce she was sharing from her CSA, and they've been in my freezer for a while now. I'd like to do something with them, but I'm not a fan of "cranberry sauce", like at Thanksgiving.

 

I don't even eat them a lot on salads because of the sugar, but I would use them sparingly if I Google how to dry them. 

 

Any suggestions of ways you've used fresh cranberries that might be interesting?

We grew up with "cranberry ice" at Thanksgiving and Christmas. It was similar to a sorbet and was delicious. Mom's grandma passed down the recipe. My son took on the challenge when Mom was no longer able to make it every year.

I made keto cranberry orange scones the other day that are delicious.  There are non-keto recipes on the web that you can look up or similar recipes for a bread or muffins. 

Fresh cranberry-orange relish is really good, too, as an accompaniment to poultry or pork.

@amyb  I have a recipe for sour cream cranberry pound cake (it's called a bread but I call it a pound cake), that is unbelievably good.  It calls for a cup of cranberries, but I use almost a whole bag since I love cranberries.

 

Let me know if you need a recipe and I'll dig it out.

 

Everyone, if you love cranberries, I found them Saturday at my local neighborhood Walmart grocery store for 50 cents a bag (ocean spray brand).  Time to stock up the freezer - they seem to last forever if frozen!

Cranberry Bread

 

1 egg, beaten

2 tablespoons melted butter

1/2 cup orange juice

2 tablespoons hot water

2 cups all-purpose flour

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 cup fresh cranberries

1/2 cup chopped nuts 

 

Preheat oven to 325 degrees.  Mix together egg, butter, orange juice and water.  Add flour, sugar, baking powder, baking soda and salt.  Stir until ingredients are moist.  Add cranberries and nuts; mix all together.  Pour into a greased and floured loaf pan.  Bake 1 hour and 10 minutes or until done (check at 1/hour).

Next time I will put fresh cranberries in my apple crisp---I put dried ones on the top that were ---ok--but think, fresh, they would taste great with the apples. I also make my own cranberry sauce using dried cherries and cranberry flavored rum that is mind blowingly good. Bread and muffins sound good too.

One of our favorite fruits. Here are some suggestions:

 

  • In waffles or pancakes & enjoy with some maple syrup
  • Toss with cubed sweet potato and/or butternut squash, put on baking sheet & roast in the oven on 400 for 45-60 minutes until cranberries have popped (or are very soft) and potato/squash has a little color on them. (Can stir the veg mixture halfway through if you like)
  • Cut an acorn squash in half, brush with oil, fill with apples & cranberries. Roast in oven at 375-400 until acorn is soft/pulling away from skin & cranberries have burst.
  • Add into oatmeal
  • Cranberry sorbet -- we like to enjoy a scoop in gingerale for a festive holiday drink (or champagne)
  • Add to your favorite blondie recipe
  • Add to your favorite pie/cobbler/tart recipe
  • Dehydrate for your own dried cranberries for future recipes...bonus -- you can control the sugar (we like to dehydrate them just as they are)
  • Cranberry bread/cookies/scones/cake
  • Make a trifle
  • Make jam & can them. A small shmear on something like date bread of walnut bread will go a long way throught the winter
  • Cranberry walnut fudge
  • Use your dehydrated cranberries on yogurt with sliced almonds

We bought 8 bags when they went on sale after Thanksgiving and processed them all last week -- made jam, froze some whole (they freeze so well), whipped up some cranberry sweet potato waffles that we froze individually for a quick & indulgent brunch on a dreary winter morning, made cranberry sauce & froze it in individual servings. I'll make cranberry walnut fudge later this week with the last of our fresh berries.

@walker,I made this cranberry bread recipe yesterday and it is delicious! I used 3 mini loaf pans and that worked perfectly. Baking time was around 30 minutes...I started checking them at 25 minutes. Next time I'm going to sprinkle a little vanilla sugar on top (from The Spice House). Thanks for sharing your wonderful recipe! My husband and I ate one of the little loaves within a couple of hours after they cooled a bit. Guess I'd better buy a couple bags of cranberries!!
