Now that the corn is in season, I will be making this relish when grilling. Goes great with grilled beef, chicken or pork. Give it a try.
Fresh Corn Relish
6 ears corn
1/2 medium green bell pepper, chopped small
1 cup chopped celery
1large onion, chopped
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. dry mustard
1/4 tsp. turmeric
1/4 cup wine vinegar
1/2 cup salad oil
2 pimentos, cut fine
Cook corn in boiling water for about 5-7 minutes. Cool and cut from the cob. Add remaining ingredients. Mix well. Refrigerate for several hours before serving.
Makes 3-4 cups.
