I need to make several desserts and won't have the time to make them 'fresh' the day of or day before the event...one of the things is a pineapple upside down cake...it's a pretty simple recipe...it's a Betty Crocker recipe, can I freeze it after it has cooled?

 

I am thinking of baking it in a throwaway square tin, and I would just wrap it really well and freeze in the pan.  Then possibly heating it up just a bit when I am ready to serve so that I can turn it upside down on a plate.....would that be OK as well?

Personally, I think pineapple upsidedown cake is only worth eating when it's fresh out of the oven and still warm. I can't stand it once it's cooled. And I make it completely from scratch, no boxed cake mix. I would not freeze it.

I taught Foods and Advanced Foods.  Cakes, breads, and quick breads freeze exceptionally well as long as icing is done after thawing.  If it's only one day, I'd just keep it in the refrigerator unless you need it to thaw while you're there.

Pineapple Upside down cake thawed will be a wet mess.

 

 

Why don't you concentrate on frozen cakes/frozen pies etc.  There are some really good recipes for frozen ice cream cakes, cheese cakes, and the frozen key lime pie is excellent too.

 

Just a thought.

 

 

Those are easy to make and can be done weeks ahead.  I personally

don't like any baked goods out of the freezer.  I know they sell frozen baked cakes etc but you can tell the difference, the freshness isn't there and why bake to begin with, just buy something then.

I'm not a fan of frozen/defrosted cakes either.

 

If you need to make it before, stick with frosted items.  Frosted items can stay at room temp for a few days.

 

Do a crumb coat and a frosting layer and it will seal in the moisture much better than refrigerating, freezing or defrosting.

 

Or, just bake cookies.

OMG I freeze everything I can! Nothing will happen to it. Why on earth do they sell already made birthday cakes in the freezer section of the grocery store? I've been freezing and thawing and eating for the past 63 years and nothing has happened yet.

Right now I have a Tiger Cake, a Buttermilk Pie and a Strawberry Cheesecake with whipped cream in my freezer.  Not to mention cookies ect..  I live alone but love to bake and our small town bakery closes in two weeks forever.  So I bought my favorites for getting me through the summer.  I have been freezing cakes and pies for over 10 years now for assorted holidays and trips to my sons to share with my family.  Go ahead it will be fine.  My biggest problem is finding big and deep enough containers for some sweets until I can drive to my son's.  But always a good excuse to carve off a bit for myself to make room for it.Heart

My friends tease me because I freeze a lot of things but I never frozen a pineapple upside down cake and was worried about it being mushy, so from the mostly positive responses i will give it a try, thanks!!
