Though it's too late for your immediate need, I've included the chocolate cake recipe used in my business. Made thousands of these. Perhaps on some other occasion, you'll find it helpful. ~Rebecca
CB Chocolate Cake
2 cups unbleached flour
2 tsp baking soda
½ tsp salt
1 stick unsalted butter, softened
2-1/4 cups light or dark brown sugar
3 large eggs, room temp
4 ounces unsweetened chocolate, melted & cooled (the higher the quality, the better the cake)
1-1/2 tsp pure vanilla extract
1 cup sour cream
1 cup very strong hot liquid coffee
Preheat oven to 350.
Grease 2-9” layer pans or 1-10x15 sheet pan and line with parchment paper.
Sift together flour, baking soda and salt. Beat butter, sugar and eggs for 5 minutes in the bowl of an electric mixer, until very light and fluffy. Beat in chocolate and vanilla. Stir in about 1/3 of the dry ingredients, half of the sour cream, another 1/3 of the dry ingredients, the rest of the sour cream and finally, the remainder of the dry ingredients. Stir just until mixed. Stir in the hot coffee and pour into prepared pans. Strike each pan on the edge of a counter or drop several timed onto the counter to release air bubbles. Bake at 350 for 35 minutes (check with bamboo skewer or toothpick). Cool in pans on a wire rack for 15 minutes. Run a knife around the edge, turn out and cool completely.
This is a full bodied chocolate cake with a good crumb and great taste.

TY for the recipe,It looks really good... The wedding is at 2:00 the cakes are filled and have the first crumb cover on them..I am tired..
I have a long day planned..I'll be in Salem for the whole week so i wont be on as much!! TY so much for all your help.I'' keep you in my prayers for your surgery on Monday! Sounds as though this cake was a marathon for you and your daughter. I hope that in a few hours you'll have everything done and be on your way to Salem. I wish you a safe trip on 5 South and a nice stay in Salem.
DD was a Cordon Bleu pastry chef prior to finally realizing her true self in a totally different career. However, she continues to do wedding cakes. One was for one of her very best friends down in the Napa Valley. The wedding was taking place at a winery and my daughter flew down there with her frozen layers in her carry-on. When she arrived at the winery's 4 star restaurant, it was 102 outside and sizzling in the kitchen, so she asked the executive chef if she could work on her cake in the walk-in. He granted her permission, so she spent 3.5 hours in that cold and ended up as sick as a dog. And she did this for free: it was her wedding gift, this 5 layer cake, which was quite beautiful, but I begged her to stop trying to fit these in between all the busy stuff going on her her life. Well, at least she's slowed down!

Sounds great. I made a box chocolate mix using left over coffee for the water and added a tablespoon of sour cream and mayo to the mix. It was wonderful. My son was up for mothers day and his birthday is Monday. He was born on mothers day 30 years ago. How did the time go by go fast....
