For Lunch: Pasta Seafood Salad

12 oz Tri colored Rotini

 

3 stalks of celery

 

I Lb. imitation crab meat

 

1 cup frozen green peas

 

Dressing Ingredients:

 

1 cup mayo (or Miracle Whip if you prefer it?

 

1 1/2 TBS. white sugar

 

2 TBS white vinegar

 

3 TBS milk

 

Salt, Pepper to taste (I also use Old Bay to taste)

 

DIRECTIONS:

 

Cook pasta 8-10 minutes or until al dente, rinse in cool water until cool, drain.

 

While the pasta's cooking, chop up the celery and crabmeat, run warm water over frozen peas.

 

In a large bowl, whisk together the dressing ingredients & spices, add the pasta, celery, crab meat and peas,  stir until evenly coated.

 

Chill several hours before serving to let the flavors marry.

 

NOTE:

 

We had Low Country Boil last night and have some boiled shrimp leftover, so I'll chop those up and add them too.

 

I've also used lobster chunks instead of the fake crab to take it up a notch for a special luncheon.

You never know how strong you are until being strong is the only choice you have.

Looks good but for me - 3 pieces of chunky pasta and I'm full.  From an elderly

lady I first heard of RINGS....small like cheerios.  I've used them in my cold

summer salads ever since.

Then add similar to yours.....shrimp, tuna, sliced hardboiled eggs, the celery - spices

onions.

I made this today and it was delicious.  My hubby loved it and ate seconds.  Thank you for a wonderful recipe.  This is a good one to take to a party or cookout.
