I'm wondering if most of you ladies actually follow recipes exactly as you cook? Except for cakes and other baked items where ingredients and proportions are key to the texture and results, I love to read recipes, but generally use them as loose guides and play with things from there. I'm a simmer-taste-and-add cook, and most of my old standby dishes are in my head. I seldom measure and may throw in more or less of different ingredients, substitute, or totally leave things out depending on my mood and what's in season or available on my pantry shelf. I know the basics of cooking and feel free to change things up.

I guess I'm creative and/or a rebel, because I don't much like to follow directions exactly step by step. Am I the only one?
