Foil Packet Chicken and Broccoli

Tonight I did make chicken for dinner. The recipe is from Big Oven website and went together fast and was declared a keeper by my family. The picture below is from the website. I did make some minor changes in the recipe and will note them in the recipe.

Foil-Pack Chicken and Broccoli Dinner (15)

1 package chicken flavored stuffing mix

1 1/4 cup of water

4-boneless chicken breasts (6 oz each)

4 cups broccoli florets

1 cup shredded cheddar cheese ( I used pepper jack shredded)

4 slices cooked bacon, crumbled (I used precooked real bacon pieces-about 1 tablespoon per chicken breast)

4 tablespoons ranch dressing

Preheat oven to 400 degrees.

Spray 4 large sheets of heavy duty foil with cooking spray

Combine stuffing mix with water

Spoon 1/4 of the stuffing mix onto the center of each piece of foil

Top each with one chicken breast

Top each chicken breast with 1 cup each of broccoli florets.

Sprinkle 1/4 cup of cheese over broccoli and top with crumbled bacon

Drizzle 1 tablespoon of ranch dressing over bacon

Bring up sides of foil and seal, leaving enough space for air to circulate.

Place packets on a cookie sheet and bake 25-30 minutes ( I baked about 45 minutes)

Remove packets from cookie sheet and let stand for 5 minutes.

Open packets carefully as they will be full of steam.

I was able to use a pancake turner to slide the meal off the foil onto plates to serve.
