Filled Roll Up Oatmeal 'Cakes'...

Ok, I would like to share another easy and tasty (healthy too!) recipe for you ladies!
FYI: This is a great way to get the kids to eat oatmeal! Wink

You'll need:

* 1 Packet of instant oatmeal (I like using sugar free)
* 1 egg or 1/4 to 1/2 cup of egg beaters
* A dash of vanilla extract
* A bit of cinnamon

- Put dry instant oatmeal mix in mixing bowl (don't pre-cook it)

- Add in vanilla extract, cinnamon and egg (or eggbeaters) and whip with a fork really well to get a consistency like pancake batter but a bit thicker

- Preheat a nonstick skillet and spray with cooking spray

- Pour mixture into a pan and make a nice round 'cake'

- Cook on one side until it's set (cooks very quickly so probably less than a minute, I go by how it looks) then flip it over to let the other side cook

- When pancake is done put it on a plate andddd....

...HERE IS THE FUN PART!

- Put any kind of fruit or other yummies you like such as bananas, strawberries, blueberries, chocoloate chip - anything YOU like - on the pancake and roll it up

- Top with a touch of syrup (or whipped cream if you're feeling decadent) and ENJOY!

This is a fun recipe because you can get creative with it - use different flavors of oatmeal - why not try apple cinnamon with sliced apples? A dot of whipped cream and you have dessert! There are so many combos to try!
