Re: February 2016 Recipe Exchange Game

I must say....I have not been here......I am SO GLAD to see the recipe swap continue....

My dad has become so mean and evil, and now I understand why my mom divorced him at my age of 2.....BUT...he NOW expects me to handle all of his medical issues, and parts of his financial issues, but not go with him to MD appointments, but take care of the MD scrueups.....(have to take care of spelling)....I NOW have to care of my grandparent's home, but can not live there myself, as I was denied this prilivige, and now own my own land and home, just down the road, and that has become a legal nightmare.......

I am having to deal with some serious medical issues of my own...I just have not wanted to bring negative issues to the forum, as I did get pretty slammed in the pet forum, because of my dad, and what he did to a rescue puppy that I got handed....THAT I no longer have, because of him, and what he did to that poor puppy.....

I so want to join you all back, and see some old names, but I do not want my negative to become part of this forum, and PROMISE.....I will try...now, once again, to try to grasp the intrest of this forum, and Recipe Exchange Game, without trying to post negative post.....I have enjoyed this game for many years, and love reading all of the post, and learning cusine from all over the USA!!!!!!!!

I will survive!!!

I am going to proceed in a positive manner, and look at the positive, and not try to dwell on the negative.....I hope you all do the same....Life is too short........I am trying to stay on POSITIVE...POSITIVE....POSITIVE....

Love you all.........

@forrestwolf

I don't know what happened to upset you, but I know how hurtful it can be. I've been slammed on the forum before - and it's usually by judgmental people who can't imagine walking in another person's shoes. I just hope that you know there are those of us who want to share joys and sorrows without judgment or ridicule.  I look forward to having you rejoin us.

Re: February 2016 Recipe Exchange Game

Here is a recipe I got here from Zhills, very good

I use 2% mayo and always use rice vinegar.

Broccoli Salad Zhills

Ingredients:

2 heads fresh broccoli
1 red onion
1/2 pound bacon
3/4 cup raisins
3/4 cup sliced almonds
1 cup MAYONNAISE
1/2 cup sugar
2 tablespoons  vinegar

Directions:

Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
Cut broccoli into bite-size pieces and cut onion into thin bite-size slices. Combine with the bacon, raisins, and almonds and mix well.
To prepare the dressing, mix mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

Re: February 2016 Recipe Exchange Game

I fix this recipe, especially at holidays when I need extra potatoes.

Great to make ahead and reheat later.....leaving more time on day of gathering.  See note at end on using crock pot.

Make-Ahead Potatoes

10 large potatoes, peeled and quartered

1 cup SOUR CREAM

1 (8 oz.) pkg. cream cheese, softened

6 tablespoons butter, divided

2 tablespoons dried minced onion

1/2 to 1 teaspoon salt

paprika

Place potatoes in Dutch oven or large pot; cover with water and bring to a boil.  Reduce heat; cover and cook for 20-25 minutes or until potatoes are tender.  Drain and place in a bowl; mash.  Add SOUR CREAM, cream cheese, 4 tablespoons butter; onion and salt; stir until smooth and cream cheese and butter are melted.  Spread in a greased 9x13" baking dish.** Melt remaining butter; drizzle over potatoes.  Sprinkle with paprika.  Refrigerate or bake immediately, covered, at 350 for 40 minutes; uncover and bake 20 minutes longer.  If potatoes have been refrigerated, let stand at room temperature for 30 minutes before baking.

**  I fix a day ahead, put in closed container and refrigerate.  Day of serving, I put it in a crock pot about 4 hours on low (or high for 1 hour and then low).....allow extra time to stir and see if it is warming enough since it was cold.  I have added a little milk if potatoes seem dry.  Put melted butter and paprika on top.  Using crock pot frees up the oven.
