I just made Nigella Lawson's cabbage with cranberries. A bit sweet for my taste, and she says to cook it for hours. I didn't and it was perfect after only a short while.
My favorite is still the sweet and sour cabbage recipe from the old Laurel's Kitchen cookbook. This also uses sliced cabbage but only cooks for maybe ten minutes or so, which is really all it needs to be tender. And it's got a bit of a tang from the vinegar, which I found I prefer. I may just combine the two recipes next time.
Who has a favorite braised cabbage recipe?

Cabbage, butter, soy sauce or balsamic vinegar and stir!

I like this recipe from Cook's Country, but it does tend towards the sweet side:
3 tbsp butter
1 onion, halved and sliced thin
2 lb head red cabbage, cored and sliced 1/2" thick
1 cup red wine
1/2 cup frozen orange juice concentrate
1 1/2 tbsp brown sugar
1 Granny Smith apple, peeled, cored, and chopped into 1/4" pieces
1 tbsp dried parsley
Melt butter in Dutch oven over medium heat. Add onion to cook until golden. Stir in cabbage, wine, orange juice concentrate, brown sugar, 1 1/4 tsp salt, and 1/2 tsp pepper and bring to boil. Cover and simmer over low heat for 45 minutes.
Stir in apple and simmer over medium-low heat until cabbage is tender, 25-30 minutes. Stir in parsley and 1 tbsp butter off heat.

I sauté onion in butter, add chopped apples, then add the red cabbage and apple juice. Cook until the degree of softness you like.

I love cooked cabbage. Here is my simple way: in an iron skillet, saute onions in olive oil, one heaping tablespoon of "better than bouillon", put cabbage in, add water (cup), and cover until the desired tenderness is achieved. Salt and pepper accordingly. Delicious.

Always cook red cabbage with a little vinegar this will preserve the purple colour

@GingerPeach Could you post the recipe for Sweet & Sour Cabbage from the Laurel's Kitchen Cookbook. I love cooked cabbage and would love to have the recipe if it's not too much trouble...

Here you go. I just made cabbage yesterday, using a combo of this recipe and Nigella's with her addition of cranberries.
