Had some nice veggies this morning.. will make a Pasta Primavera for dinner. Will stir-fry snap peas, very young vibrant yellow squash, avocado squash (drier and holds it's shape, has a nutty taste), red spring onion, carrots cut into ribbons, and rough-chopped red swiss chard. I think I'll use penne. And of course a truckload of Parmesan. I love meals like this.. and I love doing the prep...so relaxing.
