2 C fish flakes (any white fish, ie flounder/cod/tilapia, etc)

(to make fish flakes, simmer fish in small amount of water with salt/pepper - cool enough to handle and break up into flakes with hands or fork - do not mash)

1 C Italian bread crumbs

1/2 C finely chopped onion

1/2 C mayonaise

1 lg egg (may be omitted)*

1 tsp Worcestershire sauce

1 tsp dry mustard

salt/pepper to taste (I use 1/2 tsp salt & 1/4 tsp pepper)

Combine all ingredients and mix well. Shape into 4 patties. Preheat frying pan with enough butter/oil to coat pan & prevent sticking. Cook on each side about 3-4 minutes.

Note: Fish cakes can be prepared - not cooked & frozen. Thaw and heat through until browned on both sides.

* If egg omitted, you can substitute 1/2 C sour cream or 1/2 C fish stock for moisture.
