Espresso-Walnut Tart
Delicious! Quick and Easy!
- I use a ready-made graham cracker crust =)
Filling
10 tablespoons ( 1 1/4 sticks) unsalted butter
1/2 cup plus 2 tablespoons firmly packed dark brown sugar
1/2 cup light corn syrup
1/4 cup heavy cream
2 1/4 cups walnut pieces
1 tablespoon instant espresso powder
Pinch of salt
To make the filling, combine the butter, brown sugar, and corn syrup in a medium-size heavy saucepan and bring to a boil, stirring frequently. Stir in the cream, walnuts, espresso powder, and salt an return to a boil. Reduce the head to medium-low and cook at a simmer (not a boil), stirring occasionally, for 12 minutes.
Scrape the hot filling into the pie crust. Let cool to room temperature. Cover with plastic wrap and refrigerate until completely set, at least 3 hours and up to 1 day, before serving.
