English Tipsy Pudding...

.... most here may have made it or been served it before.  I made it for a recent luncheon where Easter was the theme.

 

What you will need:  

Trifle dish

Mixer

Oven

1 package yellow cake mix

12 oz Smucker's seedless raspberry jam (divided) * (I used blackberry)

29-ounce can sliced peaches (divided, reserving juice)

1/2 cup sherry or brandy (optional)

1 large package (or two small packages) jello vanilla pudding mix (not instant)

milk as required on pudding instructions

2 cups sweetened whipping cream or 8 ounces cool whip

sliced almonds

 

Cook cake in sheet pan.  Cool.  Cut into 2 parts.  Layer bottom of trifle dish with that part, pushing up to edge of trifle so it will show.  Use half of jam over the cake.  Pour half of the peaches over this.  Add half the juice from peaches.  Pour 1/4 cup brandy over this. Prepare pudding and add half of hot pudding mix at this time. Let set for 1-2minutes.  Add second layer of cake, repeat with jam, peaches, juice and brandy.  Add remainder of pudding.  Refrigerate at least 3 hours or more.  When ready to serve, add the whipping cream (prepared according to directions) or Cool Whip.  Sprinkle almonds about.  This is a very lovely and tasty presentation.

As an aside, this was George Washington's favorite dessert.  I don't think they had canned peaches and cool whip but the ingredients were same:  homemade and homegrown, however.
