I have enjoyed so many delicious recipes from the Recipe Swap that I thought that I would post this cake recipe that I received in an e-mail from www.relish.com. It was easy to make and we particularly enjoyed the flavors of the Spice and the Eggnog. It is delicious with a cup of coffee or hot tea! It can be prepared in a large loaf pan for an Eggnog Spice bread. The recipe does suggest adding an additional 5-10 minutes to the baking time for a loaf.

Ingredients:

*1 (181/4-ounce) boxed spice cake mix

*1 (4 serving) instant vanilla or cheesecake pudding and pie filling mix

*1 cup nonfat vanilla yogurt

*1/4 cup canola oil

*1 cup light eggnog (I used regular eggnog)

*1 egg

*3 egg whites

*1 1/3 cups toasted chopped pecans ( I used regular chopped pecans)

*Powdered sugar

Prep Time-5 minutes Cook Time-40 minutes

Instructions

1. Preheat oven to 350F. Coat a nonstick Bundt pan with cooking spray.

2. Combine cake mix, pudding mix, yogurt, oil, eggnog, egg and egg whites in a large bowl. Mix until creamy.

3. Sir in pecans. Pour into prepared pan. Bake 40 to 45 minutes, until a wooden pick inserted in the center comes out clean. Cool on a wire rack. When cool, dust with powdered sugar.
