One of the posts on the salad thread made me remember this..

 

Its easy and good! Take some small Boboli, spread with basil pesto, top with small ( like salad size) shrimp...and grated fresh Parmesan..bake till bubbly and cut in small wedges...

@Mothertrucker  Your's sounds quick, easy, not at all time consuming to make, and tasty.

 

I have one I'm making tomorrow for my hosting euchre card club with 3 other couples of very good friends.

 

Fingerling potatoes, boiled til fork tender. Slice length-wise, give them a little squeeze to open them up and top as tater skins.  Pop in oven for cheese to melt, done.

 

I'm topping with a spoonful or so of medium salsa, a few bacon bits, black olives on some of them, half w/shredded sharp cheese, the other half with shredded swiss.

 

I saw someone make these with the really little round potatoes, used a little measuring spoon to scoop out, then fill them.  I'm not scooping and I think they'll be fine.

 

Can't wait to try these!  We're hosting so we're having an old fashioned grill out with burgers & dogs, typical fixings to go with.

Yum! Those fingerlings sound good! My mom used to do something similar but with a dollop of sour cream and a little chives and caviar on top...of course, in those days no such thing as fingerlings, she used really small new potatoes...
