I make and freeze my own mini meat balls and then use those along with fresh ricotta cheese mixed with an egg and crumbled feta cheese with fresh chopped parsley.That is the filling I use.

My meat sauce is from home made sauce also made with ground beef, and I usually freeze that in batches too.

I try to cook healthier with less salt and try to refrain from using too many items with preservatives.

Forgot to mention many times I will not use feta cheese, and instead use diced smoked mozzarella cheese which I love the flavor of, as well as using the feta.

I love the ease of that. I don't happen to like meatballs--late husband adored them and we'd have them often, but I've never been a fan.

My stuffed shells are from my mom's recipe. She mixes ricotta with an egg, some mozzarella and some parmesan (grated) and chopped parsley. This goes in a vegetarian version of lasagne OR...into stuffed shells, for which I don't know why BUT I have a real passion.

TO EASILY STUFF A SHELL with messy cheese mix:

Plop all your cheese mixture as above into a ziploc bag and cut the corner. Squeeze the cheeze into the boiled shell. Place on a layer of sauce in a Temptations 9x12 pan and cover with more sauce and some grated mozzarella. Bake 30 min.

Love hearing responses here....good ideas! It really is a simple recipe that you can adapt things too. This recipe should be Easy Stuffed Shells PLUS! I would love to know if original Taste of Home poster would be here too...maybe not.

YEA! used to make my own sauce, my own cheese filling, etc. but that was long ago, and I don't go to that much bother anymore. Definitely going to try this one...the jumbo shells are on my shelf now and have ignored them thinking of the work!!! come to think of it, my recipe was just cheese filling and then topped with a hunk of mozarella towards the end of baking time. DEFINITELY trying this one!! thanks {#emotions_dlg.tt1}
