Easy Individual Cobblers

I came across a recipe by P Allen Smith while watching CreateTV.  He made individual blackberry cobblers and I decided to use peaches.  Here is my take on this recipe:

 

16 oz frozen peaches, thawed  ( or any fruit you desire)

4 TB sugar

zest 1/2 - 1 orange

4 tsp triple sec OR orange juice

1 pie dough sheet

4 ramekins ( 5oz)

 

1. Spray each ramekin with oil

2. Divide pie dough sheet into 4 and roll out a little larger

3. Place pie dough in individual ramekins and let drape over ramekin

4. Place 1/2C fruit into ramelkins

5. Sprinkle 1 TB sugar on top of fruit of each ramekin

6. Sprinkle a pinch of salt on top of sugar of each ramekin

7. Sprinkle a pinch of orange zest into top of each ramekin

8. Sprinkle 1 tsp of triple sec into each ramekin.

9. Fold dough over top and sprinkle with sugar

10. Bake 35 - 45 minutes  @ 350 degrees

11. Serve with ice cream, whipped cream or plain.

Sounds good but more like individual pies than cobbler which is usually made with biscuit dough.
