Easy Chinese: Orange Peel Chicken (Like P.F. Chang's)

I just pulled the chicken out of the freezer to thaw!

Easy Chinese Orange Peel Chicken

Sauce:

1T evoo

2T minced garlic

4 green onions, sliced thin

1C canned tomato sauce

1/2C water

1/4C sugar

2T chili garlic sauce (adds heat)

1T soy sauce

1/2 C evoo

4 chicken breast fillets, not slices

1 egg, beaten

1C milk

1C flour

peel from 1/2 large orange julienned into 1/8" thick strips; you can use more if you like a stronger orange flavor

Prepare sauce:

Heat: 1 T oil over medium heat

Quickly Add: minced garlic and sliced green onions, stir for a second

Quickly Add: tomato sauce and water so the garlic doesn't burn

Add: sugar, garlic chili sauce and soy sauce and bring to boil

Simmer 5-6 minutes or until sauce thickens, then turn off the heat.

Prepare chicken:

Heat 1/2C oil in wok or fry pan

Cut breast fillets into bite sized pieces

Combine beaten egg with milk in med bowl

Put flour in another

Coat chicken pieces by dropping in flour, then egg milk mixture, then
back in the flour

Place on plate until all chicken is coated

When oil in wok is hot add 1/2 the chicken and cook a couple minutes
till browned on one side, then flip over

When golden brown and cooked though, remove to rack or paper towel to drain

Repeat w/remaining chicken

When all chicken is cooked, wipe out pan with paper towel and put back on stove to
heat up

When wok is hot again, add julienned orange peel and chicken

Heat for 20-30 seconds, stirring gently

Add sauce to pan and cook for about 2 minutes until sauce thickens

Stir gently so chicken coating doesn't fall off!

Serve w/white and/or brown rice on side
