I never thought the canned enchilada sauce that I buy is expensive. Just normal pricing ofthe canned goods I buy. I just don't understand your remark is all. Woman Happy

I just heat some oil in a fry pan, I take corn tortillas, place in hot oil, not to fry, but to "soften"( this is an important step for flavor and allowing you to roll them... I make a mixture of grated cheeses ( cheddar, Jack, Colby, whatever you like), add lots of sliced green onion and black olives...

Ladle some enchilada sauce on the bottom of your rectangular baker...roll couple of spoonful the mixture into each tortilla, lay in pan, cover with enchilada sauce, top with more cheese, green onions and olives...bake...YUM!
