I am trying to find an easy biscuit recipe that can be frozen after making and before baking. I have tried three different ones I found on-line and the biscuits do not rise - just remain flat. I am not much of a baker so hoping someone on this forum has a tried and true one!

Thanks. I just looked that up and printed it. I was using recipes for buttermilk biscuits. I will try that one.

Do you have a Sam's Club? DH buys the Pillsbury pre-cooked biscuits. I put them in zip-lock bags in the freezer. When we want a biscuit I pull out a couple. Only takes a few seconds to heat in the microwave.

Probably, the reason your biscuits aren't rising is you have killed the baking powder. With buttermilk and soda, a gas is developed and if it doesn't get heat, the gas well die. It's a matter of chemistry.

That could be but I am only trying recipes that say you can make them ahead and freeze before baking. Oh well, I don't need to be eating biscuits!

************************************The Pillsbury are really great and other than making them yourself will give you a really good biscuit. I've used them myself and taught Foods and Advanced Foods.

I bake and freeze biscuits all the time. I use Alton Brown's recipe.
I don't freeze them uncooked, though. I cook them fully, and then freeze. I defrost them in the microwave. Or, if I'm feeding a lot of people, I use the oven.

What I love about this recipe is that it's relatively low in fat, and it's foolproof.

Rhodes makes a pretty good frozen biscuit too. They also make cinnamon buns (frozen).... Rhodes makes many different types of frozen biscuits. I think there are 20 to a bag. I have 2 bags in the freezer but haven't tried them yet. I like their cinnamon buns with coffee in the morning though....... Give it a try..............
