Off topic sort of but some Asian recipes want Sherry and a tsp or so of sugar in the sauce.  I just use Harvey's Bristol Cream Sherry and skip the sugar.

QVC is selling a marsala wine chicken dish at this moment  on TV.

 

It's a sous vide version of the dish.

I do the same thing w/ recipes that call for unsalted butter then the recipe calls to add butter. Like huh? Smiley Happy

I apologize for not reading through all the responses, but I have recent experience with this.  I tried to buy Marsala wine at my local grocery store and was told that they can't sell it because I live in a dry county and it has too high an alcohol content.  They directed me to the sauces aisle and I bought the wine for cooking, as you mentioned in your post.  The results were awful. It didn't taste anything like chicken Marsala and was barely edible in my opinion.

 

I've since then visited the state ABC store in a neighboring county and was able to buy real Marsala wine.

 

So, to be clear... they are NOT interchangeable.
